Pistachio Biscotti Recipe: Vegan!

2 cups all-purpose flour
1 cup almond flour
1 tablespoon baking powder
1 teaspoon sea salt
1 1⁄2 cups sugar
1 cup unsweetened applesauce
3 tablespoons vegetable shortening
1 teaspoon pistachio extract
1 teaspoon vanilla extract
1 cup pistachios toasted
- Preheat your oven to 350 degrees F.
- In a large bowl, sift together the all-purpose flour, almond flour, baking powder, and sea salt.
- In a separate bowl, cream together the sugar and vegetable shortening.
- Add applesauce, vanilla extract, and pistachio extract to the sugar mixture.
- Gradually add the dry ingredients to the wet ingredients until a dough forms.
- Fold in the toasted pistachios.
