How Biscottini Were Born: The Truth Behind the Bite-Size Revolution

Biscottini did not start as a marketing idea. They were born from something much more real. Customer complaints.

My grandmother made two kinds of biscotti. One was the almond biscotti most people know. The other was a simple biscotti made with plain flour and carefully chosen flavor. No inclusions. No almond flour. She baked this second style specifically for dunking into espresso. It was much crunchier and could stand up to a long dunk without falling apart.

My grandmother always said, “When you take out almond flour, you have to bless it with more love.” For her, that meant more flavor. That is why, for example, we use dried lemon zest in our lemon biscotti to bring out a pure, clean lemon profile instead of hiding behind sugar or heavy coatings.
