What goes into our gluten-free biscotti
A reader asked us to show what is inside, so here is the honest answer. Our gluten-free biscotti are built on one core recipe, then finished with flavor mix-ins. The core recipe is gluten-free flour blend (which contains milk powder), almond flour, baking powder, sea salt, shortening, eggs, sugar, vanilla bean, and almond extract. Depending on the flavor, we fold in whole roasted almonds, chocolate chunks, dried cranberries, or pistachios.
Allergens to know. Our gluten-free biscotti contain milk and eggs, and tree nuts (almonds, and pistachios in the Cranberry Pistachio flavor). The milk comes from milk powder in our gluten-free flour blend, which is why none of our gluten-free flavors are dairy-free. They are baked in a shared facility and are not recommended for anyone with celiac disease.

How our gluten-free biscotti are made

We shape the dough, bake until set, cool, then cut the loaves into clean, even biscotti and bake them again until they are crisp from edge to edge. We taste from every batch. If a tray does not meet our standard for crunch, we adjust. That is the benefit of baking in a small, hands-on bakery instead of a factory line.
How to store gluten-free biscotti
- Keep biscotti in their original bag until you are ready to open them.

- We do not recommend freezing our biscotti. The texture can suffer once they thaw.
Unopened bags have a six month best before date from the day we bake and seal them. You will find this date printed on the bottom of every bag. Once you open a bag, the biscotti are at their peak for about a week, although many customers tell us they still taste great beyond that when stored well.
