Two years ago, I discovered and fell in love with the products of The Biscotti Company. The texture of their biscotti is consistent, being crispy but not crumbly, never soft or gooey like some of their larger competitors. This is true from cookie to cookie and batch to batch. Texture and flavors are well balanced, too. In the Chocolate Almond, the chocolate is abundant enough and flavorful without taking over. Great complement to a good coffee or tea. The gluten-free version loses none of these characteristics, either. Regardless which flavor(s) we have on hand in my household, they disappear quickly.
