How This Flavor Started
Let the truth be told. The birth of this flavor came from Facebook.
A Facebook friend who had been following me from my days on Style By Jury, a Canadian reality show,
noticed I started The Biscotti Company and was experimenting with flavors.
He sent me a message suggesting I create a turtle flavored biscotti using chocolate, pecans, and caramel.
And so I did.
At first, I thought it was too cumbersome. I was thinking I had to make chocolate chunk pieces and caramel pieces with pecans.
Then I realized something simple. I can just buy each component separately and mix it in, just like Chocolate Almond or any other flavor.
So I went for it.
The first batch was okay, but I used whole pecans instead of pecan pieces and it was way too sweet.
Between the caramel, the chocolate, and the sugar, it needed a reset. I knew I had to cut back on sugar.
The second batch was way better. Not as sweet as the first batch, but it was still missing the secret sauce.
So I made one more move. I caramelized the pecans and added a bit more salt.
Third time is the charm. I felt like I hit the jackpot with this flavor.
